Salad with homemade croutons and tuna fish. Fancy french vinaigrette dressing.
Made funfetti cupcakes with Nikki, and left most of them with her haha. There wasn’t any frosting and obviously the mix came from a box but for the cost of 2 cupcakes at a boutique you can make 18 at home!
I like to think that I’m still completing this goal even if “a meal at home” is really just “a boca burger in the microwave” some nights. It’s so much cheaper to eat at home, but when you spend most of your day on a college campus sometimes it’s a hassle. You have to pack lunch when you leave in the morning, carry it around with you all day… It isn’t that bad, I suppose, but sometimes I get tired of it. And invariably, lunch is dinner’s leftovers from the night before.
I am in this new phase of cooking where I add fresh cilantro and garlic to EVERYTHING. And the result is fantastic.
If I may be so bold as to offer advice for people who want to start cooking but don’t really know how, choose the simplest meal you can think of and add things to it. Rice and vegetables for instance. Or pasta and sauce.

I can’t wait to try it out. Maybe I’ll pull a Julie/Julia and cook my way through it. I bet I wouldn’t put on as many pounds as Julie did with French cooking.
Today I ate two meals. And neither of them was at home. One was even in my car, the leftovers from a Chipotle burrito bowl (don’t worry, it was refrigerated!).
Bad.
What a weird-looking little grain. When it’s cooked and the spirals are just hanging out in there it looks like it should be wiggling around. It tastes pretty normal though. I am eating it with lentils.
