It is an Arabic dish, I believe it is call Maloube, or something close.
It is eggplant and tomatoes, sauted in olive oil with a layer of cooked meat and then a layer of rice. You cook it all together with some spices and then turn it upside down to serve. The rice is at the bottom and all the good stuff is on top. Garnish it with some toasted pine nuts, cashews and almonds. It is delicious.
Serve it with Arabic bread, cucumber/mint yogurt and a salad for a yummy meal!

I made a very delicious lentil soup last night. I know it isn’t a complete meal, but it was really good. That’s all we ate for dinner. And the best part is, no recipe, I love it when my experiments turn out good…the problem is duplication!

I made one of my meals last night. Baked Salmon with a parmesan cheese topping, roasted potatoes and cucumber and tomatoe salad. And a delicious ice cream pie for dessert. Everyone loves the salmon, even non-salmon eaters.
