Apparently the easiest way to cut down on carbon emissions is to eat meat twice a week or less. In addition, I’m always freaked out by the stuff i hear with regards to antibiotics, hormones and illegal pesticides making it into even good grade beef. Since the organic meat thing is just to expensive (not until i am WAY better paid! too many other things to spend that money on right now) it’s easiest and healthiest (and skinniest) to try and eat vegan food twice a week at least. Oh, and I’m lactose intolerant.
The challenge, believe it or not, will be to get enough veggies into my daily food without relying on soy products and pulses and whole grains to make up the meals.
