Last night I made extra of my hamburger and rice meal so I would have some for lunches for the week. This should save some money for one of my other “things”. Just mentioning it because it seems rare I put much extra effort into this list of things and will take any little thing at the moment.

I tried a smoked sausage recipe from my simply cooking magazine. Actually called for polish sausage but I had smoked so….
Anyway, fried it up with some potatoes, peppers (red, yellow), and onions. Seasoned with cajun seasoning.
Was great!
Usually I’m horrible at just winging it. However, inspired by some southwestern scalloped potatoes I made my own southwestern chicken. Took some boneless, skinless breasts and seasoned them with cayenne pepper, chili powder, taco seasoning, paprika, and some black pepper. Baked them and added some bell peppers and onions and sprinkled with colby jack cheese. Not only did it look great it tasted great.
for my husbands birthday. Was thinking swiss steak, one of his favorites with baked potatoes and not sure what else, probably corn because he doesn’t like many veggies but want to go all out as possible.
