K, this one turned out well and will keep me going for a while. I call it 2X2 chili b/c of the simple way to remember the ingredients:
2 regular/large-ish cans of mixed beans
2 big cans of tomatoes: one diced, one pureed (not tomato paste though)
2 smaller cans of corn
2 packages of Yves brand veggie ground round
2 onions
2 jalpenos
2 tbs balsamic vineger
2 tsps garlic powder
As much chili powder and cayenne pepper as needed
