This last one was mixed too thin, without enough flour, so it was too mushy.

The more of these I make, the more picky I get about it. I slightly undercooked this most recent one, and I almost couldn’t eat it.

So I went and tried something simple: fruit preserves. They were too sweet, until I found some “reduced sugar” preserves, which worked just fine.
Also tried using rice in the batter, which just made it doughy.

... I haven’t entered much, but I made a bunch of pancakes. As follows:
I tried unsalted butter instead of salted, tried adding strawberries, tried using a dutch oven (good) and a square glass pan (meh), and messed with the flour/milk proportions.

Made three more:
One I took most of the milk and flour out of, and made a sort of hard custard, the other… I didn’t realize we were out of eggs, so I made a tough, flat cake that was way too sweet. It was awful, but I ate it. I made one that made up for it, though.

Made two pancakes with some soy juice, which made no huge difference, and one with banana, no sugar, and whole wheat flower. It wasn’t very good, not surprisingly.

...cutting down on these to help me lose some weight, but I took the day off yesterday and so I made two.
