It’s important for me to remember this goal now that my schedule is more open. I tend to drink coffee when I first get up and not eat breakfast until a few hours later. But since I eat breakfast so late, I skip lunch. Then I’m starving by the time dinner is ready.
So I bought some healthy snacks to help me with this goal. I ate bananas today and yesterday, and I have spinach in the fridge for a fresh salad (and for dinner tomorrow). I’ve been nurturing my basil plant for two weeks now and I’m ready to rip off its leaves and throw them into a curry.

I came up to Portland, Maine to visit my friend and we made a red Thai curry for dinnner. It wasn’t that rich in vegetables, but it did have organic chicken, mixed Asian vegetables, and loads of fresh basil. Mostly I just think it’s “healthier” as opposed to seafood or greasy bar cheeseburgers if we’d gone out to dinner.

They look like rhubarb, and I assumed they would taste like kale or maybe broccoli rabe. But they’re really a nice alternative to spinach. We chopped the leaves into strips and the stems into 1/2 inch pieces, then cooked them in a wok with garlic, red pepper flakes, and olive oil. Then we ate them with pork chops and rice pilaf. I really have to make an effort to eat more fruits and vegetables, but maybe if I write about it on the internet I’ll be more motivated.
(And maybe next time I’ll even take my own photograph.)
