But often I cheat with soup and use canned, frozen, and dried stuff: this soup had canned bamboo shoots and I used a powdered mix for seasoning.
The weather cooled off enough that I decided to make a nice batch of pozole soup, which is pork and hominy.
I was surprised how easy it was to make.
With the weather warming up, I have eaten soup much less. But that means I can switch to a sopa fria, a cold soup—and gazpacho is usually the name of the game :)

It was a beef and shrimp wonton soup with egg noodles—about angel hair pasta width.

Contessa makes great prepackaged frozen stirfry, and I found they have some great recipes using their various packages.
Thai Cashew Chicken Soup is one of them, and I’m going to try it, and see how it goes.
I made Stephen Furst’s Hot and Sour soup with rice and some other cream soup dregs.
It’s a pretty versatile recipe :)
All the more reason to eat more soup.

Yesterday, I decided to have soup for breakfast and lunch.
Cimmy has sometimes commented on my odd choice of soup for breakfast, but… it is easier to prepare than hot cereal, and I usually am able to make it sufficiently nutritious.
I am beginning to eat the same soup over and over again, so… I think I will look at more recipes.
