I’ve finished my first 2 batches of beer, and now am working on 3 more batches (in various stages of brewing). So far, I really like how my first two batches turned out.
Only advice I can give is to make sure your green beer tastes atleast like weak flat beer before you bottle, which imparts a huge amount of the flavor’s maturity- oh, and don’t bottle it if it tastes like crap already…

I’ve got a pair of carboys, and they’re brewing my first two batches:
European-style Bock
Dark Pilsner
So far, the Pilsner has been bottled and is waiting for aging and lagering, and the bock is going to enter secondary fermentation tonight. I sampled some of the green yesterday off of the Pilsner, and though it’s a little ale-y, it’s quite good.
It’s not over until I’m drinking my bottles though!
