From: Taste of Home Simple & Delicious Cookbook
(recipe changes: used talipia instead of catfish, didn’t include garlic salt)
1 egg, lightly beaten
2 tablespoons lemon juice
1/2 cup all-purpose flour
1/4 cup yellow cornmeal
1 teaspoon Cajun seasoning
1/2 teaspoon salt
4 talipia fillets
3 tablespoons vegetable oil
In a shallow bowl, combine the eggs and lemon juice. In another shallow bowl, combine the flour, cornmeal, Cajun seasoning and salt. Dip talipia into egg mixture, then coat with cornmeal mixture.
In a large skillet, heat the oil over medium heat. Fry fillets, two at a time, for 5-6 minutes on each side or until fish flakes easily with a fork.
Very good recipe. I liked it and my dad said it was delicious. Will be making again.

I was eating some vanilla wafers and on the side of the box was a recipe for a wafer pie crust. 1 1/3 cups crushed vanilla wafers, 1/4 cup melted butter, and 2 tbsp sugar mixed together and baked at 350 degrees for 8 minutes.
My grandma used to make chocolate pie at Christmas which was just a graham cracker crust with chocolate pudding on it. It was good and I started making the same with butterscotch pudding. Yeah, my family may have simple tastes, but it’s what we like. I don’t believe I have ever had a wafer crust and wanted to try it. I thought banana pudding would be a good complement to it.
So I made the pie crust and let it cool, added on banana cream pudding, then whipped topping and sprinkled it with leftover crushed vanilla wafers.
My dad loved it too and already wants me to make another one.
Pretty, simple, delicious.

Banana Bread

The Best Banana Bread
I did not like this at all. Could be I just don’t like banana bread (this was the first time I have ever had it) or I’m just not a very good cook (true). No one else in my family liked it either.

Sunday was the boyfriend’s birthday and I cooked him dinner on Saturday for it. I made vegetable fried rice for the very first time from some recipe book I recently bought with a slight variation from a recipe on allrecipes.com (one of my favorite sites).
He said it was okay, but I did not like it. If I do make it again, I’ll omit the soy sauce since I think that would probably be my reason for not eating it.
