Potato and Cheese Frittata 23 months ago

INGREDIENTS:
3 tablespoons olive oil
2 cups frozen hash brown potatoes
1 medium onion, diced
1/4 cup sliced jalapenos
salt and pepper to taste
1/2 – 1 cup shredded Cheddar
cheese
5 eggs, beaten

DIRECTIONS:
1. Preheat the oven to 400 degrees F.
2. Heat oil in a 12 inch skillet over medium-high heat. When the skillet is hot, add the potatoes, onions and jalapenos, and fry until potatoes are golden brown, about 10-15 minutes. Season with salt and pepper. Pour eggs over the potatoes and onions.
3. Place the skillet in the oven for 10 minutes, or until eggs are firm. Remove from the oven, and sprinkle shredded cheese over the top. Return to the oven for about 5 minutes, or until cheese is melted.

No good for vegans, obviously, but super yummy! Very adaptable, too, you can add all kinds of veggies to the base recipe.
Makes the kitchen smell great!

Black Bean Burgers

Ingredients:
1 large can black beans
1/4 cup diced yellow onion
1/4 cup diced red bell pepper
1/2 teaspoon ground cumin
1 egg substitute (ener-G egg replacer)
1 cup bread crumbs (I just smash up saltines :D)
2 tablespoon fresh chopped cilantro

Directions:
Rinse black beans. In a large bowl, mash black beans then add onion, bell pepper, cumin, egg substitute, bread crumbs and cilantro. Blend until all ingredients are mixed well. Form bean mixture into patties. I stick em on the George Foreman grill, but you could pan fry or bake them, I’m sure!

Found this on Kraft.com and modified it slightly. It’s meant to be a side dish, but I would serve it over whole grain pasta as a meal for my mom. It sounds yummy, doesn’t it?

Zesty Zucchini

3 Tbsp. olive oil
2 cloves garlic, minced
4 medium zucchini, cut into 1-inch chunks (about 4 cups)
2 large onions, cut into 1/4-inch-thick slices, separated into rings
1 jar (15 oz.) marinara sauce
1 cup water
1/4 tsp. black pepper
1/4 tsp. red pepper

HEAT oil in large skillet on medium-high heat. Add garlic; cook and stir 2 minutes or until tender.
ADD zucchini and onions; cook 8 minutes or until tender, stirring frequently.
STIR in marinara sauce, water and pepper; mix well. Simmer 25 minutes, stirring occasionally.

I have a sister who is vegetarian and my mom is vegan. I like to cook for them, but my repertoire is limited. It would be nice to prepare something besides beans for them. Although beans are good, too!!
