I have countless times tried to become vegetarian or vegan so I have tons of useful things in the kitchen that I seem to never have used. For instance today I used egg-replacement powder for the first time. I never would have actually gone through with using it if I hadn’t of decided to use all the stuff in my kitchen a couple of days ago, and now that I have I realize what a great product it is! Last time I had meat was 2 days ago (chicken left-overs) and I’m thrilled with the meals I’ve had. It will be wonderful if I can manage to have meat only 3 or 4 times this week. Realistically, I think I can do this, and if I can do this I can quit altogether within a month. For Lent I am going to try to quit eating chicken.
