I found a recipe and tried it….it came out fabulously! My host-mom used to make it all the time when I lived in Spain, so I was pretty stoked that I figured out how to make it on my own.
ive figured out how to make some killer shrimp. which some may not consider to be vegetarian, now that i think of it. but oh well, i eat seafood. i sautee the shrimp in butter, garlic, and lots of lemon juice, and then serve the cooked shrimp over a half avocado, with white rice. YUM. 3 of my favorite things ever.
I’ve made it a few times now, and LOVE IT.
It’s so so so very easy, perfect for my college-student schedule and budget. And I get maybe 4 meals out of it!
Black Bean Chipotle Chili
1 Tsp olive oil
1/2 cup chopped onion
3+ cloves garlic, minced
2 Tbsp. chili powder
1 Tsp. minced canned chipotle pepper (1 chipotle)
2 (15 oz.) cans black beans, drained
2 (14 oz.) cans stewed chopped tomatoes, undrained
1 (4 oz.) can mild green chiles, drained
Salt and Pepper to taste
1. Heat oil over medium heat in a large saucepan. Add onion and garlic and saute 3-5 minutes until the onion is tender, stirring frequently.
2. Add remaining ingredients, stir, and bring to a boil.
3. Reduce heat and simmer for 15 minutes.
It’s great if you’re in a hurry, I buy pre-chopped onion at Trader Joes, to make it that much easier. I love throwing everything straight from the cans into the pot and getting something so yummy as a result.
