So i tried my very first batch of my own beer this weekend and it turned out pretty good. I was really worried it was gonna taste like crap from the extracts I put in during bottling but it was delicious. I started off with a simple English Brown Ale recipe and then during the bottling process I added vanilla and almond extract to certain bottles and ended up with 1/4th vanilla, 1/4th almond, 1/4th vanilla almond, and 1/4th regular. I didn’t have a dropper so I kinda just poured the extract in each bottle but all the bottles I tried seemed to have consistent flavor. Next time I will be more accurate in my measurements.

I didn’t use a secondary carboy for the conditioning process, instead I just let the beer condition in the bottle which added a nice layer of yeast at the bottom of each bottle, but it was fine. I think for subsequent batches I will use a glass carboy for conditioning for aesthetic purposes.

It was a very exciting and interesting process and now that I know what is going on, I am confident that future brews will come out just as good if not better… I think for my next batch that I am planning on doing this weekend I am going to either make a chocolate creme stout or some sort of IPA… mmmmmm

I went to the local homebrew store on saturday to pick up the necessary equipment and ingredients and then went back to my house to start the brewing process. Right now the yeast is happily converting the mash sugars into carbondioxide and alcohol. When my liquid creation is done fermenting I will have a nice (hopefully) english brown ale. When I bottle it, I plan to add different flavors to different bottles. Three flavors I want to try are vanilla, almond, and a mixture of vanilla and almond. Anyone have any advice on what other flavors might taste good in a brown ale?
