Although not all the new recipe attempts are captured in my entries here, I’ve been in this habit of frequently trying new recipes for about a year and a half now. I think that’s good enough to call this goal complete! With a new Cooking Light issue coming every month, I don’t fear that I’ll slip back into a cooking rut anytime soon.

Tried a baked tilapia with spinach, tomatoes, and onions in the new quest to eat fish at least twice a week. Also tried a chicken and orzo salad with goat cheese that turned out to be wonderful.

Made balsamic-glazed tuna and fresh blackberry cobbler tonight for dinner. My husband did not drench dinner in Tabasco sauce. I think that’s a victory!

Tried a really excellent sausage and spinach soup recipe tonight.

Continuing with the Cooking Light trend, tried a curried short ribs recipe from their latest issue. A little lacking in curry flavor, but still delicious. Also tried a Moroccan chick pea chili that was nicely spicy and had good vegetable content.

Tried a Cooking Light recipe for falafel pita sandwiches. The “falafel” tasted more like barely structured hummus, but was tasty just the same.

Needed something fast and easy for dinner tonight. Marinated some chicken breasts in soy sauce, rice vinegar, and sriracha sauce before baking – turned out very well!

I like canned tuna, but hadn’t ever gotten around to tuna steak. Tried a seared tuna and spicy slaw recipe last night. Decent!

Tried a Lebanese meatloaf recipe that had bulgur in it. Certainly wasn’t the best meatloaf I’ve ever had, but given the amount of fiber and the simplicity of the recipe, I might consider it again.
