If you’re in Seattle, I highly recommend the class at Culinary Communion ( http://www.culinarycommunion.com ). They have both basic and advanced classes. I’ve probably taken about 15 classes there, including both the Techniques and Essentials series. All the classes are hands on. I would say that they’re more for people who are interested in food and want to make stuff they eat in fancy restaurants or at the $2 vietnamese sandwich place rather than people who want to do the 15 minute 3 ingredient thing…
