I did a little bit of searching around, and I came across this site: http://archaeology.about.com/od/currentdigs/Archaeology_Digs_2008.htm
Some of it is a bit outdated, but if you go to the individual dig’s website, it usually has updated dates for the next time out, prices, etc. Some of them count for 6 or 8 hours of college credit, too.
Now it’s just a matter of saving up the money for the dig fee and the plane ticket. Mabye I’ll combine a dig with a bit of backpacking. ^ I have a friend’s wedding in September of next year, so I’m shooting for 2011 so I have plenty of time to travel around when the dig is over. It’ll also give me plenty of time to save up the money I’ll need to travel about. ^

I sort of did this when I was younger. When I was 12, I told my Dad I wanted to be an archaeologist. My Dad, being the way he is, called around to some of the local universities, and arranged for me to go on a anthropological dig that was going on in the area. I spent the entire summer out there, and had a fantastic time.
I’d love to be able to do this again, maybe in the Middle East or the Mediterranean. I’m not quite sure how to go about this without being in a university archaeological program, but I’m sure there’s some way it can be done. ^^
