I keep frozen broccoli in the freezer and it takes 90 seconds in the microwave to heat it up. It is delicious with sea salt and pepper and I can add it to just about anything.
If I have extra veggies, I cook them with eggs and make an omelette that is great and low cal.
I try to have a vegie and a salad with dinner or add veggies at every meal.
Fruits are easy for snacks.
The main thing that makes it tough to get them in your meals is if you have to spend a lot of time cutting and preparing to put them in your meals. Either buy them cut ( more expensive than whole but at least you eat them and a veggie that you toss because it goes bad is more of a waste) or cut them when you get home and just store them ready to toss in your recipe.

I am doing fruits for dessert. It’s working out great! I bought a smoothie maker. I put strawberries and a banana in there. It tastes amazing. No sugar, ice cream, milk – nothing! Still delicious. I also took an apple, cut it in half, cored it, put raisins in the middle and sprinkled brown sugar and cinnamon and nutmeg on the top. I baked it for 30 minutes and it was FANTASTIC. This is totally do-able. I have been doing well with veggies by trying to make sure I have at least some vegetable with lunch and dinner. I think this is going to work out better than I thought. :)
