My hard drive crashed and I lost ALL of my recipes for my book. Wah! Never fear. I still know how to cook and how to write, and even if I can’t remember every recipe, still there is the process to enjoy.

Zucchini and Sweet Potatos 3 years ago

We have zucchini and sweet potatos growing in our urban garden. Today I decided to design a recipe using them both.

1 medium sized zucchini cut into hearty bite sized chunks
2 sweet potatos peeled and cut into bite sized chunks (slightly smaller than the zucchini.

Put the chunks into a ziplock bag. Add
1 tsp sea salt
Dash black pepper
Dash white pepper
Tablespoon of dried crushed rosemary
Tablespoon of dried herbs (herb di Provence or Italian herbs)
3 Tablespoons of pure olive oil.
Dash of tamari sauce.

Seal and shake the bag until vegetables are covered. Put in dish and sprinkle with dried garlic. Microwave for 7 minutes. Place into 375 degree oven for 20-30 minutes. Yum

Took a cake to work last week 3 years ago

It was what I call Biltmore Forest Cake, because I developed it for the Biltmore Forest Country Club over a decade ago when I was the pastry chef there. It is a white sponge cake with lavendar blossoms, iced with white buttercreme, a swirl of blueberry jam inside, and curls of white chocolate outside. It is a gooooood cake for sure. My best actually. Now my bosses husband wants me to make one for him!



Hmm... recipes 3 years ago

I need to stop daydreaming about recipes while I am driving. Yes, I was thinking about white chocolate mousse torte while driving on the expressway today, and I don’t recommend it. Usually I just daydream recipes while someone is talking politics or while waiting at the DMV or physicians office; but recipes while driving is a road hazzard.
