complimentary flavors – spices w/ foods
simplify – Anyone can make a complex meal, I need to get better at making recipes simpler, yet still good.
repeatibility – I often don’t measure or write things down, so I don’t have a record of what was soo good what what I did to make something easily.
tonights recipe; w/ complementary spices, simplified recipe, and written so we can repeat it. (not exactly how I made it, but I’m trying to simplify the recipe, should be as good if not better)
Fall veggie chilli
1 can of red beans (any will do)
1 can of tomatoes with mild chillies
1 large can of crushed tomatoes
1 large red onion chopped
1 large squash (not sure what kind, I think butternut) peeeled and chopped
1 large green pepper chopped
1 large package of baby bellas or crimini mushrooms chopped
2 cloves garlic
1 tsb salt
2 tbls chilli powder
1 tbls paprica
2 tbls cumin
In a medium sized pot add enough water to boil squash. Boil until soft.
While waiting for squash to cook, put peppers, onion, mushrooms, garlic, salt and spices in a large pot, and cook over medium heat.
When squash is fork tender, drain, and add to veggies (should be softened). Add in tomatoes, and beans. Cook over medium until bubbly, then turn down to low, and simmer for 10-15 so flavors can meld. Serve w/ sour cream, and a little cheese.
This is a very mild chile, you can add some heat with crushed red pepper, tobasco, and or siracha… what ever lights your candle.
