I did well for a few months, but I then had several months where I don’t think I really tried anything new. Anyway, I’m going to try this again for next year.
Penne pasta (I used the mini penne), chopped portabella mushrooms, onion and garlic, pancetta, cream, vermouth, and black pepper. And some grated Parmesan cheese.
This one turned out really well. I guess the fruity-ness of the vermouth is what did it.
Putting things off to the last minute again.
Rice, olive oil, garlic, onion, chicken broth, sun dried tomato, mushrooms, and zucchini, finally some Parmesan cheese. I didn’t have any wine handy. It turned out pretty well.
I just made it up as I went. I had some fresh and dried mushrooms. Made a cream and Parmesan sauce. Turned out pretty good. But I think it needed a little more something. But a good starting place.
OK. Not much of a recipe, but I’d never had them before and I was running out of time this month. My oven is kind of goofy so they ended up a bit more done than I normally would have preferred. But not too bad. But given the touchiness of cooking eggs in the oven I think I’ll stick to the stove top where I can keep an eye on them.
