THe second full week of veggie life is just peachy…no pun intended! My family is benefitting from a life with less meat too, although the rest of them are still eating meat (just not as much as formerly). I made lentil stew over couscous, baked potatoes with toppings, veggie pizza, potato soup, two nights with tofu entrees, pea soup and lots of homemade wholegrain bread. I think they’re all hanging in there okay. I know I love it!!

I have only been back on the veggie wagon for 2 weeks but already feeling better. I get so much more excited about eating when I know it will be healthy and good for me. I even fed my fussy family a no-meat supper last night and they LIKED it.

for two years I ate a completely vegetarian diet, lost weight, felt great, looked great, then after I had hip surgery my doctor talked me into eating meat again. I want to go back to the veggie life!
