Yesterday I made Grilled Chicken and Zucchini Sandwich for lunch for everyone. It was fantastic and I highly recommend it as a healthy, portable lunch option.
When I was growing up, Chinese food was Beef and Broccoli, Sweet and Sour something and fried rice. I saw this recipe for Chicken-Peanut Chow Mein in my Cooking Light and thought it would be good to try. It is so filling and full of flavor for the calories. I am really beginning to like this magazine.
Tonight we ate Orange-Scented CousCous Salad with Almonds, Cilantro and Cucumber out of Cooking Light. My husband doesn’t like couscous that much, but he really liked this one. I highly recommend it for couscous fence sitters.
Tonight I made sopapillas for my group’s Cinco de Mayo party tomorrow. They are like Mexican donuts and they are terrific. I am also bringing breakfast empanadas (savory pocket pies) and some tamales for my lunch contribution. The tamales are left over from Christmas, but are still excellent.
This week I tried a Cooking Light recipe called Chicken Baked in Coconut Curry Sauce and it was sooo good. I highly recommend it if you like curries. And that fact that it was so healthy was a bonus. It fits into my diet. I plan to make this often. It makes for great lunch food too.
I have fallen in love with my Paula Deen cookbook. My parents gave it to me for Christmas and her cooking reminds me of my family’s food. Granted I can’t cook like they used to because of the man’s food allergies, but I love trying her recipes. This week I tried Paprika Chicken, Chicken Georgia, and White Bean Chili. They were all very good although I think I’m going to cut back on the butter.
