actually I’m not too bad as a vegan, in terms of avoiding animal products – I was already lactose intolerant, so that kind of helped!
But I’m probably not a very healthy vegan. I need to make sure I eat enough of what I need, rather than subsisting on coffee when there’s nothing else around. Kind of miss living in NYC, they had some awesome vegan places! but it can be done here too. Guess the best thing to do is to cook more meals from scratch.
treeangel, you are right – going vegan and staying that way can have a really good effect on your mental state :-) This has been a firm choice that is completely my own, something I’ve made a decision on and taken control over without being forced. For once I am acting on my beliefs.
(maybe that part sounded a bit selfish! Ultimately, going vegan for me is about respect for the other inhabitants of this planet, and minimising my impact on their lives as best I can. But the personal benefits are interesting too.)
