Beef stew and chicken scallopine! 10 months ago

I made a wonderful beef stew tonight. I let it cook for about five hours, and the meat practically fell apart when you looked at it.

For Valentine’s dinner, I made this amazing chicken scallopine. I mixed Dijon mustard with the egg that I used to make the breading stick, and the flavor was amazing. YUM!



Squash Soup 15 months ago

I made the most DELICIOUS butternut squash soup tonight – it only took 20 minutes and will only set me back 67 calories per serving. I will be making this all the time.



Stir fry! 17 months ago

I finally made a stir fry that I liked, with chicken breasts and snow peas. ‘Bout time! Every stir fry I’ve tried in the past has been bland, so I marinated the hell out of the chicken, then cooked it rather slowly. I know my technique isn’t right, but the flavor was spot on.



Lots of new ones! 17 months ago

I cooked a ton of things lately, and most of them turned out great.

While vacationing in Maine, I cooked a huge pot of lobsters, and another of steamers in homemade veggie stock.

This weekend, I made garlic chicken bites, zucchini chips, and some chicken pesto pasta. All of it was really delicious.

I also recently made some to-die-for scalloped potatoes.

From here on out though, I’m going to be trying really healthy recipes, as my ass is too big for my pants.



Bacon Wrapped Scallops 18 months ago

I wrapped scallops in bacon and broiled them with garlic butter and they were delicious along with some au gratin potatoes. Not very healthy, but definitely worth the calories!



Peach Tart 18 months ago

I made the most delicious peach tart last week. I made it out of phyllo dough, peaches, vanilla, cinnamon, and sugar. Then, I topped it with my mock cheesecake made out of a block of light cream cheese, a tub of light cool whip, some lemon juice, and some lemon zest. It was really delicious, and I made it up myself!



This week's dish - Hoisin Honey BBQ Salmon with Ginger Brown Rice 19 months ago

I made this for my two friends and myself. It was really delicious. I also made strawberry balsamic sorbet for dessert. I followed the recipe and it was a disaster, so I had to doctor it up myself. The salmon was a lot of work. I probably won’t make it again, but I really enjoyed the finished product.
