I’ve really slacked off on this one; and since 43Things says it’s been a year since my last recipe – I’m going to start over from scratch. I’m going to do my experimenting during the week; and each week I’m going to choose 1 meal to go on my list of 10, so that I will have this completed by July 30, 2007. I also plan on posting one meal each week here – so you can share in the yummy goodness.

It includes cheese when I do it; but you could substitute swiss flavored soy cheese…
4 Slices of Sourdough Bread
4 tsp Dijon Mustard
2 Granny Smith or Golden Delicious Apples Quartered
1 Cup of Packed Radish Sprouts (Broccoli sprouts ‘r fine too)
4 Slices of Swiss Cheese, each cut into triangles
Slice bread diagonally and toast lightly under broiler (one side). Remove and flip. Allow to cool slightly. Cut each 1/4 apple into 4 slices. Spread 1/2 tsp Dijon Mustard on each bread triangle. Place 4 slices of apple, fanning slightly to cover bread. Lay 2 tsp of sprouts over apples and cover with triangle of cheese. Broil on cookie sheet an additional 3-4 minutes or until cheese is melted. Serve 2 triangles per person.
Serves 4.
((I did this twice, both times with “real” swiss cheese. The first time, I had the rack too high and the cheese turned a little brown & black; but still tasted good; second time was perfect))
