Today went very well, I made myself a yummy lunch of collard greens in peanut sauce over brown rice and went to Panera for dinner. I had the low fat vegetarian vegetable soup and I am kind of concerned it’s not vegan. The broth is obviously vegetable based, but you never can be certain. Even so, it was that or go hungry and I feel that if there were any animal products therein, I can hopefully be forgiven on account of my ignorance. Anyone know for sure? In the future I will definitely check out recipes beforehand better, but it was a spur of the moment kind of dinner with my bf…

So I guess it hasn’t been too long, but it’s going fairly well. Now that I’m home from school it’s harder to have access to fresh fruits and veggies because if I buy too few my family gobbles them up and when I buy too many they spoil and my mother scolds me for being wasteful. Sigh.
On a brighter note, my boyfriend and I (whom I managed to convert to vegetarianism a little while back—-yay!) have been cooking up wonderful vegan food all week, including: chana masala (curried chickpeas), collard greens in peanut sauce, edamame, all with brown rice and delightful soy ice cream for dessert. It’s nice being able to cook and eat vegan stuff with him, especially since my family is less than enthusiastic about my transition. Oh well :) Just got to keep trying I guess… I’m also really going to try to get away from all the carbs I’ve been eating, and my all time favorite…peanut butter and jelly. Sigh. I’ll get there.
