than I did last year this time. But, I think I can be more consistent. Daily Goal: 2 servings of fruit and 3 servings of veggies. Let’s see how that goes.If I can do that consistently for a month, I will consider this acheived. Let’s say 25 out of 30 days.



yesterday and today 4 years ago

Yesterday: ate a little tomato and lettuce in sandwhich, coleslaw, and some carrots. Not much

Today: (even less) just some tomato and lettuce and peppers in a sandwhich.



Bought the veggies this weekend. 4 years ago

Love the farmer’s market. Today I will start recording the vegetables I eat.

today I ate about 1/2 cup of peas, 1/2 cup of squash, 1 cup of beans (they count as vegetables, don’t they?), 1/2 roma tomatoe and some lettuce.



I've tried different methods to get me to focus more on vegetables... 4 years ago

but they have all fallen by the wayside. Here is another one. I will post all fruits and vegetables I eat here. That way, I will be more concientious about it. Hopefully, that will work. My goal still remains to eat 2.5 cups of vegetables and 1.5 cups of fruit a day. When I do that for 1 month 27/30 days, I will consider it a success.



Okay, so I have't been experimenting with different veggies... 4 years ago

But, I have been including more of them in my day. I’ve been including an apple or orange at every lunch now and try to eat a banana after breakfast. I’ve got the fruits covered. The veggies I’ve been trying. I guess it’s a slow process for me. I am better than I was a month ago when I started, but I still have a long way to go.



Coriander Spinach 4 years ago

This sounds very good to me. I found it in an American Heart Association cookbook.

Vegetable oil spray
2tablespoons minced onion
16 ounces frozen chopped spinach
2 tablespoons water (plus more if needed)
2 large garlic cloves, minced
1/2 teaspoon ground coriander
1/4 teaspoon salt
Pepper to taste

Heat a large skillet over medium heat. Remove the skillet from the heat and lightly spray with vegetable oil spray. Cook the onion for 3-4 minutes, or until translucent, stirring occasionally.
Stir in the spinach, water and garlic. Cook, covered, for 6 minutes, stirring frequently. If the spinach starts to stick to the skillet, add more water, about 1 tablespoon at a time.
Stir in the remaining ingredients. Cook, covered, for 2-3 minutes, or until the spinach is wilted, stirring occasionally.

1/2 cup has only 22 calories!



I have to adjust what I said in my last entry 4 years ago

I think I will post a recipe once a week instead of two. I didn’t get to it like I said I would (too many activities in the last few days). So, I will find a recipe I think I’ll make this week and post it. BTW, I did very good yesterday on the veggies.



I thought of something. . . 4 years ago

while I cleaned out my fridge and freezer and found some veggies. I thought I would start sharing vegetable recipes here. That will help me eat more veggies and different types of vegetables. I think I will try doing that at least twice a week. I’ll post one tomorrow.

I need to make a greater effort on this. I need to clean out my refridgerator and look in my freezer and see what I can have. I’ll do that tomorrow.



Okay, so I haven't tried eating veggies 4 years ago

the last couple of days. But, I have eaten enough fruits and I found a lost cookbook of mine-Vegetables on the Side-to help me. I’ll look it over in the next couple of days. Slowly but surely I’ll do this!
