so a week and a half ago…
i tried pie
i used best recipe’s (a cook book by cooks illustrated) take on lemon meingue pie. well, except i forgot to pick up conrstarch.
so that made for runny pie. i made a roux to thicken things up… but, it was a little rough.
i will have to say that with my kitchen aide mixer by my side, my meringue came out fluffier then i have ever seen it.
but then it after coming out of the oven.
the crust was great. not all that pretty—but it tasted great. apparently the secret is an animal fat and a vegetable fat (so butter and my helathy balance spread worked perfect together)
i will try again soon. i’ve realized i can’t try this every week, b/c i’ll get all pied out :P
this is the first thing i’m going to knock off this list.
first, i’m going to find the best recipe. i have to work on my crust. i have rotten crusts. . .
ahhh sometimes it’s nice to worry about the little things.
