Chicken with Rotini (from Kraft Foods)

3 cups whole wheat rotini pasta
10 RITZ Reduced Fat Crackers, crushed (about 1/2 cup crumbs)
3 Tbsp. KRAFT Grated Parmesan Cheese
1 tsp. dried oregano leaves
1 egg white
4 small boneless skinless chicken breast halves (1 lb.)
2 cups tomato-basil spaghetti sauce, divided
1 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese
COOK pasta in large saucepan as directed on package. Meanwhile, combine cracker crumbs, Parmesan cheese and oregano in pie plate. Lightly beat egg white in separate pie plate. Dip chicken in egg white, then roll in crumb mixture until evenly coated. Set aside.
SPRAY large nonstick skillet with cooking spray. Heat on medium heat. Add chicken; cook 5 min. on each side or until cooked through (165ºF). Spoon 1 cup of the spaghetti sauce over chicken; top with mozzarella cheese. Cover skillet with lid. Reduce heat to low; simmer 3 min. or until sauce is hot and cheese is melted.
MEANWHILE, drain pasta; return to pan. Add remaining 1 cup spaghetti sauce; toss to coat. Cook on medium heat 2 min. or until heated through, stirring occasionally. Spoon onto serving plates; top with the chicken.

26. Milk Chocolate Latte- I tried this after stumbling upon the recipe from a morning talk show. And it was delicious!
27. Ham and Cheese Strata- Thanks to Rachael Ray I made this dish for lunch (using our ham leftovers and adding mushrooms and corn as well). It turned out to be delicious, and both my husband and I enjoyed it!

I made beef stew last night (from a recipe in a Mexican Food magazine) and it was tres magnifique! From the Kraft Foods website, I made the e’clair cake, which is simple to make because all you need is graham crackers, jello pudding and pie filling mix, cold milk, and whipped cream. Then you fill a base of a pan with graham crackers, mix the remaining ingredients, and wait 5 mins. Next, you add a layer of the pudding filling, then you add another layer of graham crackers…you repeat this process until all of the pudding filling is used up. Then I changed it a bit (after keeping it in the fridge for 3 hours)—-I added a layer of Cool Whip instead of using cake icing to top it off. Here’s the site for the recipe…

I made Maple-Flavored Glazed Carrots with Boiled Potatoes in addition to a scrumptious Chuck Pot Roast. It was nice to sit down to a meal with my husband after a harum-scarum type of week. Ahhhh!
