39. butternut squash soup. YUM! this stuff is yummy and easy.

40. Acorn squash stuffed with sausage, potatoes and peppers.

#38 goat cheese turkey burgers 4 weeks ago

super easy to prepare and cook. Only used 5 ingredients. Bliss.

#37 chocolate chip cookies 1 month ago

I’ve made them from scratch only twice before and was curious why they came out so hard. I love the chewy ones and figured out less flour + loads of butter =chewy. Very happy to know this. Unfortunately I ate all the cookies in two days.

cold avocado soup and peppercorn crusted cod fillets. Not bad. Plus I had a friend and her daughter over for dinner. I love dinner parties! Good wine and conversation to accompany a delicious fish meal! I wish I could do this every week.

32. Amy’s cream peach pie. Yum!!!!!
I wanted to make WN’s cobbler but when I went to get berries they were all out of black berries and the raspberries weren’t looking so hot :( I wonder if I can get away with using blueberries. Hmmmm

33. orange marinaded pork chops. Not bad.

34. Fingerling potato salad. Okay this one is cheating because it was the same recipe as regular potato salad but it still felt new because I had to cook them less and they are more flavorful.

chicken curry (Indian inspired) with basmati rice. Great raves from the DH who thinks he hates Indian food. It’s a keeper I think.

25-orzo and parmesan. A great variation of mac and cheese. Easy and while not healthy still better than the processed stuff.

26-orzo pasta with corn and tomatoes. Nothing to write home about but a good simple recipe to keep on hand.

27-zucchini meat loaf. delicious

28-zucchini soup. Even more delicious

29-pickled beets and spinach salad. The beets were the ones we canned the other day. They were AMAZING. I didn’t think I like pickled things but this has clearly changed my mind.

30. Grilled tuna steaks with a ginger, soy marinade. Okay I didn’t do the grilling but I did whip up the marinade courtesy of cooks.com I think. Sugar and sherry vinegar were teh secret killer ingredients. Yum Yum.

#24 strawberry shortcake 2 months ago

easy and sooooooo delicious. I want to eat this every day.

#23 chilled carrot ginger soup 2 months ago

Great flavor but there is such a thing as way too much ginger. Couldn’t actually eat the soup because it was so intense but I will be making it again. With less ginger. I’m really enjoying this cold soup kick though.

#22 pesto pasta 3 months ago

with a twist. I used trader Joe’s lemon pepper flavored noodles and cinnamon basil for the pesto. I can’t believe they can charge so much for premade pesto at the grocery store. It’s so easy to make. I the ingredients can be a bit pricey. I added chicken, zucchini, mushrooms and onions, all sauteed separately and added at the end with minimum seasoning. There were already so many flavors going on. The DH couldn’t resist seconds. I’m getting a bit better at this. I had the vision and it came out!
