For the last few months I have been receiving free Martha Stewart/Food Network books in the mail. Recently, I saw one that was marked “It’s all light” and decided to try some of the recipes from there. It was actualy surprisingly good. I think I will start cooking more from her recipes. Trying a couple new recipes this week.

It was surprisingly good! We both thought that the picture would look more attractive than the actual dish, but it came out great. We have some left for another eveing and I will definitely make it again in the future.

Last night I made a good light dinner out of some leftovers. The couscous really filled me up, which apparently wasn’t so true for my husband. I also did some extensive food shopping yesterday, and I am all set to make another healthy and possibly more filling dinner tonight. There will be chicken breasts with spinach and tomatoes on the side.
Last night I made a quick an healthy dish from all the leftover ingredients that we had in the house. It came to be quite tasty, although my husband had some difficulties eating it because he came back from a dentist.
This morning I started wondering what I should buy at the grocery store for dinners for the rest of this week, and finally noticed that I have a whole bunch of books on healthy cooking. Apparently they’ve been coming by mail and are full of delicious recipes. I already found one I will try out tonight. The meal on the picture looks delicious.
Over the last couple of weeks I’ve been trying to make most of our dinners vegetarian. My husband has been a vegetarian for 3 years before and a little after meeting me. But once we moved in together, he gave up on it. Lately I’ve been trying to compensate has lack of vegetarianism a little bit, by cooking vegetarian, healthy dinners for both of us. Planning is key.
This week we’ve had homemade dinners 4 days out of 5, and yesterday we had some frozen tortellini. It kind of worked out nicely, because I staggered the week but using left overs of each previous dish for each next one.
Well, this past weekend my mother in law visited us and brought over lots of food. It’s very nice of her, and we will definitely eat it, but it will put off fulfilling this goal for a little while.
Today I am planning to make some Fiesta rice with the leftover sausages. And salad of course!
Well, ok today I cheated a little, by preparing a frozen meal from Trader Joe’s for dinner. But on the other hand I finally made a very healthy vegetable salad to complement it. And it turned out sooo good. I was kind of hoping to leave some of the salad for lunch tomorrow, but we ended up finishing it. Oh well, I guess I will have to make more tomorrow. That’s definitely a good habit to form.
