Today I cooked chinese!! It turned out really well. Now I have to figure out the rest of the week :(

Anyone have any easy casserole or crockpot dishes?  — 2 months ago

I need to be more specific with my goal… I will make one crockpot dish and at least one casserole dish…once a week. Anyone with any suggestions?

Doing very well this week… I did my shopping on Monday. I made sandw. for lunch- ( I was hungary for the chicago rolls) Then for dinner my husband was hungary for hamburger helper ;)

Tuesday for lunch my husband fixed another sandw… ok.. writing it down. I don’t feel that I did such a great job but it gets better.
Tuesday for dinner I cooked the chicken with picante and cream cheese from the biggest looser cookbook.

Today I cooked meatballs and the spaghetti sause in the biggest looser cookbook and tonight I making the curry chicken.

ok… I found this on parents.com
and I cooked it tonight. It turned out really good. Ok.. It wasn’t the healthiest meal being pasta…I doubled the ingredients and added a whole package of bacon.

Makes: 4 servings
Start to Finish: 20 minutes

Ingredients

  • 1 9 ounce package fettuccine
  • 1 cup frozen green peas
  • 3 slices center-cut bacon
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon thyme
  • 1/2 cup fat-free half-and-half
  • 1/2 cup shredded Parmesan

Directions

1. Cook pasta according to the directions on the package, but don’t salt the water. Three minutes before the pasta is supposed to be done, add the green peas to the pot. Drain, and reserve 3/4 cup of cooking liquid.

2. Meanwhile, cook bacon in a large saucepan on medium-high heat until crispy. Remove bacon from pan and discard all except 2 teaspoons of drippings. Add onion to the pan and sauté for 3 minutes in the leftover drippings. Add garlic and thyme, and cook another minute. Stir in pasta and peas, reserved cooking liquid, and half-and-half. Cook 2 minutes. Crumble bacon on top of pasta and toss with cheese.

I am going to try to cook new things…. I am going to organize my cookbooks and cook more from my biggest looser cookbook and from the Bob Green cook book :)
