2 huge carrots
2 medium sweet potatoes
2T olive oil (in the future I might use a little bit less)
1 tsp cumin
sea salt to taste
pepper to taste
I cut up the veggies into roughly the same sized “fries,” then tossed them in a bowl with the olive oil. Then I spread them out on a baking sheet and seasoned them, and baked them for 30 minutes, until they started getting brown around the edges. I really like these… and hopefully it will be a way to sneak some nutritious food into a form that my dad will actually eat.

5 small apples
8 carrots
1 inch piece of ginger
It made about 2.5 servings, and it’s pretty good. It’s easy to prep and clean up after too.

I’m officially starting my 15-day reboot today… and since it’s my first time trying this, I plan on following meal plan pretty closely. I think that all of the recipes that I try for the next couple of weeks will be from the Reboot With Joe website.
3 small apples, chopped up
6-8 lg strawberries, halved
Maybe 1/4 c. organic blueberries
3T raisins
cinnamon
nutmeg
I don’t know how much cinnamon and nutmeg I used… I just kind of sprinkled some nutmeg over the top of all of it, and accidentally spilled a lot of cinnamon into the concoction, but it smelled amazing while it was baking. I baked it for 45 minutes in a covered casserole dish at maybe 325. I’m not a huge fan of mushy baked apples, but it was okay. It might be nice in the winter months especially, and maybe with some walnuts thrown in. Also, I might try different berries to see how it changes the taste.
