How I did it: I have touched on this before in a couple of entries, but now want to elaborate. Kathmandu is a very old and picturesque city. How I did it: I've eaten deer many times, but this is the second time I've eaten reindeer. The first time was a few years ago at a Russian restaurant in Shibuya, and that was a reindeer sashimi with a dip sauce. J2 cooked an interesting miso nabe tonight. In this shot is shirako, negi onion, napa cabbage, enoki mushrooms. The large white thing on the left is daikon radish, and the one on the right is yamaimo potato. Shirako is another acquired taste. I’ve posted before, tarako, which is red cod roe. Shirako, which translates to “white children” is cod sperm sack. It’s added to the boiling miso pot along with the enoki, napa, daikon, and negi. (See comments)
Scrambled egg with salmon, broccoli, shitake, negi, shoga, shoyu, sesame. Fry the salmon, broccoli, mushroom and onion in sesame oil. Mix the egg in a bowl with a dash of soy sauce and a dab of ground ginger. Pour it into the pan with the fried stuff and scramble. Top it with sesame seeds and salt to taste.
