Yesterday = win 3 days ago

I ate three square meals, all of which wear delicious, nutritious, and thoroughly vegan. For lunch I had some of the soup I made with the armful of dumpstered greens (five ready-prepared packs of cabbage, leek and broccoli plus several packs of asparagus) I brought home from work, which ticks the environmentally-friendly box as well as the animal-friendly one. Dinner was more greens (I have a shitload to use up now :P) with mashed potatoes and fried tofu. Yum! I also had three servings of homemade chocolate cake and soya cream. Who cares if it’s nutritionally invalid, it was gorgeous.

To quote a wise woman, “Nom nom fucking nom.”

Become an excellent vegan cook (read all 21 entries…)
Chickpea cutlet things and potato wedges (from scratch!) 3 days ago

This is what I mean by ‘become an excellent vegan cook’ – being able to throw stuff together and for it to not taste like shit.

The chickpea things were just mashed chickpeas and whatever herbs and spices were in the cupboard at the time. Plus a wee dash of soya milk to hold it all together and soy sauce, which I add to practically everything now. I’ve made them twice now and they’re fab.

The wedges also went surprisingly well, considering they were a first attempt. The trick is to parboil them first. ;)

Go me.
