How I did it: For budget reasons, I tried to figure out what I could live with. Cabinets were very sturdy and a good layout, but dark and depressing, so I decided to paint them white. Floor was ok. How I did it: I knew I would never write all my recipes onto cards to fit in a box. Especially during busy times when I find new recipes. So I got a really cute expandable file folder at Target and made 7 categories: Mains: meat/poultry, Mains: Fish/Veggie, Sides, Salads/Appetizers, Desserts/Beverages, Recipes to Try, and Info (I'm always clipping out articles about nutrition or "ways to use squash" etc.)This method probably wouldn't be the… Read how I did it…
Back in the kitchen after a too-busy hiatus where I only made stand-bys. Chili-Cheese Black Bean Enchiladas from Cooking Light were delish! The best part was that it used soy crumbles instead of meat, but even the boyfriend was fooled. I’d never tried making enchiladas before, but these were really good and not as time-consuming as I’d always thought.
