I’ve started several books over the last few months. I’d like to finish a few (and start a few more) this summer. I like to read (mostly) “chick lit” because its just such an escape from the everyday. I’ve got one book mostly read at the moment. perhaps I’ll go finish it tonight. :)
I’ll try to track them on allconsuming…

i think it’s reasonable to expect myself to lose 5 lbs every 4 weeks, knowing that “appropriate” loss should be 1-2 lbs per week. I’ll sure try!
and i wont let all these months of plateau get in my way anymore!

made chicken cutlets with lemon and white wine. (forgot to add the garlic) came out pretty good if a little crispy on one side.

resulted in me learning how to make vodka sauce.. as in penne alla vodka, now this particular recipe isn’t so great for those weight loss goals tho!!!
but start with a few shallots and garlic finely chopped with some olive oil in the bottom of a pot. also she adds in a few thick slices of prosciutto chopped up like the shallots/garlic. Then she adds in a few cans of peeled crushed tomatoes but these tomatoes are thrown in the food processor to mince them. none of the juice from the cans gets added to keep it thick. so let that go for a while then put in some basil leaves and let simmer. later add a few splashes of vodka, heavy whipping cream, and grated parm cheese.
now i know there are no measurements and no times in this but that’s the way his mom cooks. someday i’ll try it on my own, but i’ll have to be careful, its not exactly diet friendly!
