I just bought a full run of the Cook’s Illustrated hardback annual issues for 60% off the cover price. The hardback books are so much easier for me to use than the loose magazines. I have a few issues of CI here and there and I’ve found some of my favorite recipes there, so I’m excited to explore this new purchase!
In other news, I’m going to the Cape this weekend and I’m planning to make champagne risotto with a gifted bottle of champagne rather than spend a ridiculous amount of money for dinner out. I’m looking forward to this meal very much, it’s been years since I’ve made it.
I ran some numbers on this over the weekend and they were encouraging. Without too much of a pinch I could have it paid in 10 years instead of 30. I need to pay off a few smaller debts before I can really get started on this but I’d like to get in the habit of sending some extra towards principal even if it’s a very small amount at first.
