It’s been ten years or more since I last sat down in a classroom as a student, but the other night I began my first college class of this semester. It was very exciting and very overwhelming all at once. I can’t wait to see what lies ahead! It feels great to be taking this step.



Make pumpkin pie!
Easier than anticipated! 4 years ago

My boyfriend and I made pumpkin pie for Thanksgiving this year and it was much less intimidating than I’d expected. We actually did it twice because the first one was a trial pie for ourselves, before we made one to share with family - just in case we messed up ;). Our biggest obstacle the first time was stewing the pumpkin. The second time around, we sliced the pumpkin and baked it until it was softe enough to spoon out of the rind. It was a piece of cake (or pie). It turned out to be delicious - much better than any store-bought pie or pie made with canned pumpkin. There’s no turning back now.
