How I did it: Not a big deal, surprisingly – I just made sure I had alternate protein food available for dinner, like lentils. I still had a full plate (and a yummy one!) but cut down on meat buying, cooking, and ultimately on my carbon footprint. This goal also pushed me to be more creative; instead of just assuming we’d eat ground beef or chicken for dinner, I bought lentils, or planned meals like stirfry that can be bulked up with eggs. How I did it: I work in communications but, with the recession and moving to Europe, jobs in that area for a non-native speaker are hard to find. After months of searching and solliciting (and studying language), I was about ready to give up. My best option to escape from staying home all day seemed to be applying for a job in a supermarket!
