How I did it: So many fantastic things have happened to me this year, and mostly it's been amazing because I have spent most of my time with my best friend - now my husband. He's encouraged me to try new things, and take on challenges I would have been afraid to before. I've increased in confidence, and in how I feel about myself. How I did it: My mom has a lady named Denise clean her house every two weeks, so I asked her to see if Denise could come and do our place. It turns out she lives less than 15 miles from us, so it worked out really well. We have just been too busy (with the film, Erik's job, my job, etc.) to do it ourselves, and too tired when we DID have the time. How I did it: It was a short documentary about the making of our movie, ROULETTE, which I am producing and my husband is directing. There are many recipes for Coronation Chicken, but I experimented and this one most closely approximates the salad I had while in Scotland.
3 c. cold diced cooked chicken (I use 2-3 bone-in chicken breasts, poached)
1 small yellow onion, diced finely
Light olive oil or butter
2-3 tsp. curry powder (not hot)
1/2 c. heavy whipping cream
1/2 c. mayonnaise
1 Tbsp. apricot preserves
Salt and pepper
Saute the onion in a little oil or butter until it is soft and clear (but not brown – a little salt can prevent the browning). Stir in curry powder to taste. Set aside to cool.
Whip cream with a hand mixer until it holds stiff peaks. Carefully fold in the mayonnaise, cooled onion mixture, and apricot preserves. Season to taste with salt and pepper, adding more curry powder if desired. Carefully fold in chicken. Refrigerate for at least one hour to let all the flavors blend.
I like to serve it on Kaiser rolls, but you can serve it on white toast, or by itself with lettuce as a lunch platter.
Makes 3-4 sandwiches, depending on the size of the bread.

but I feel like now I’ve really succeeded. She has removed just about every vestige of herself from the internet. She closed every page/account of everything she had: Myspace, Facebook, 43things (her second account, which she thought was “secret” and which I found in about 4 clicks), her blog (which she also thought was secret), her Tatooed Nation page, everything. So while I don’t care who is looking at my stuff online, she apparently feels that she can’t have anything visible. As far as the online community goes, she does not exist. Not sure what she’s scared of…
But it makes me smile a little inside (I am evil, I know, but after all she did to my husband and me, I feel justified in my evilness).
I do miss the amusement of following her very “important” life, though.
