I made homemade meatballs with panko bread crumbs, egg, parmasean/romano cheese, italian herbs, fresh garlic, and onion powder. (I didn’t have any fresh onion)
Baked in a casserole dish with sauce and the meatballs and covered with low fat mozzarella cheese. Yum.

I did this semi-homemade style. In homage to the Vikings playoff game and with fond memories to the yummy Buffalo Chicked Dip I made on New Years Eve I decided to do Buffalo Chicken Strips. I sliced organic chicken breasts into strips and then used Shake and Bake on them and baked them in the oven. Half stayed like that for the kids and the other half got tossed in Franks Red Hot Buffalo Wing sauce. Yum! Add some cut up celery and carrot sticks, rice pilaf side dish, and blue cheese dressing and it was tasty and easy meal.

I chopped the beef into small cubes, browned it in a hot pan. I added onions and garlic. I cubed celery, carrots, potato – all fresh. Popped it all in the crockpot with some merlot, 2 knorr buillon cubes, salt, pepper, herbs, and Hungarian paprika.
It came out perfect.

I forgot about 43things.com and my goal to write a reason a day I love my hubby. I didn’t forget to love my hubby though. Today’s reason is that he is a great breadwinner. Hurray for hard working, steady, responsible guys. They are gems amongst the rocks out there.

He never yells at my for my hobbies, shopping, or books I buy. He has a love of “toys” and playing games too so we both just budget a bit of money for these things and as long as its within reason we leave each other alone!
A friend of mine was telling me how she heard of a lady that had to hide craft purchases from her husband and I thought that was really sad. It doesn’t allow you to be your own person and also by hiding things it does not bode well for the relationship.

The “point yourself in a direction” method of success has one enemy and that is the fear of not being perfect.
