I just learned how to make pita bread and have been enjoying pita sandwiches of all sorts and kinds. This is my fav do far.
1 cup plain nonfat yogurt
1 garlic clove, minced
1/4 teaspoon cayenne pepper
Mix and refiderate above the day before so flavors can meld.
1 cup coarsely chopped English hothouse cucumber
1/4 cup chopped drained oil-packed sun-dried tomatoes (or regular tomatos)
4 tablespoons chopped green onion
2 tablespoons chopped fresh mint
1 tablespoon red wine vinegar
1 teaspoon olive oil
1 6-ounce package baby spinach
2/3 cup crumbled feta cheese (about 3 ounces)
Mkaes about 4 pita sandwiches.

There something really neat about mosaics. Maybe it’s because of the colorful and shiny bits & pieces, I like things that sparkle. Ultimately I’d like to do a large mosaic on my office wall. I’ll start small, maybe a set of coasters or a planter.

UPDATE: Okay, so I apprenticed with two very nice SC Midwives for 6 months and had a blast of a time palpating baby-bumps, attending prenatal visits and assisting at births!
Now I’m researching Midwifery immersion programs to give me a boost in the clinical hours area. I’m thinking Davao philippines right now but am not certain yet. Also meeting with other area midwives to apprentice with.
Not sure of the direction I’ll go at this point – the only thing I know for sure is my heart is even more in Midwifery than before and that all roads lead to more baby bumps!
