Feeling a bit bleugh today. I just want to eat everything in sight and obviously I can’t eat many things. Yesterday I ate a LOT, still sticking to the diet, but definitely over ate… I feel fat… it’s PMT… I just want to sleep!

Falafel are one of my favourite foods. They’re a bit like hummus in that they can be so good when they’re right, but it can be difficult to find the perfect falafel and I’ve had some major disappointments in the past. (Or maybe I’m just really picky?)
Considering how much I love falafel, it’s weird I never tried making them myself before. They’re easy to make, a lot life my chickpea burgers actually: open tins, chop a few bits, throw everything in to a bowl, add spices and blend.
After the blending bit things got a bit complicated… I formed the mixture into small balls as instructed. Easy. After this, you’re meant to lightly coat them with gram flour. OK…. I wasn’t sure how to do this, so first I tried to sprinkle some flour on them just using my fingers, but I ended up with more flour on the baking sheet than on the falafel. Then I tried putting some flour into a small bowl and rolling the falafel in it… not a good idea because they’re quite soft so don’t hold their shape very well (nor do they actually roll well!). In the end I decided that coating them with flour wasn’t that important and as few of them were partially coated already, I’d see the difference and know for the next time.
The recipe says bake in the pre-heated over for about 20mins until golden, turning once. So I set the oven timer to 10 minutes, thinking it’s probably best to turn them half way through. After 10 minutes, however, they hadn’t even started cooking so turning them was just making a mess. After 20minutes, they looked a bit better and I finally turned them. I think I let them cook for at least another 20 minutes, if not 30 or more. So at least twice as long as the recipe said! I’m starting to wonder if there’s something I’m doing wrong with the oven…
I was glad I hadn’t covered them all in gram flour because the few I had coated, didn’t look that nice, the flour was still white and I ended up scraping it off them…
Taste wise, the falafel were ok, though far from fantastic. They were a bit bland, so next time I’ll use twice the amount of spices. I also felt like something was missing… I didn’t use mint because I’m not a big fan of mint in food, but now I wonder if that would’ve made a difference. Next time…
There was some left over so I had them for lunch today and found that they tasted a bit better cold. They’re definitely better than the Cauldron ones are and I think after few tries I’ll get them just right.

I tried making hummus a few months ago and the end result was inedible. I usually like a lot of garlic, so, as I often do, I used double the amount of garlic in the recipe… big mistake!
Last week, I decided to try again, following the recipe religiously. At first it was a bit bland for my liking, so I kept on adding cayanne pepper… until it was too hot…. I managed to tone it down a bit by adding more lemon juice but it was still a tiny bit too hot for hummus, though it was ok and we ate it all.
Yesterday I made hummus yet again. This time I was more careful with the spices and the end result was much better, best so far. However, it’s still not right, nowhere near as nice as my favourite hummus. (I’m quite picky about hummus; it has to be just so). I can’t really figure out what to do, but now I’m really determined to try again and again until I think it’s the best hummus I ever tasted. I think that’ll take quite a few attempts…
