Okay just paid off my Visa…again…still hovering around 2,300 on the DFCU loan. 10 months to go on the car, we owe $2777.29 on it.

So easy so good!
Cook some chicken in lime infused olive oil. When it’s starting to get brown, throw in some lime juice. Meanwhile, take four tortillas (corn or flour) and microwave for 30 sec to get them soft. Scoop some black beans onto each tortilla, then the chicken, and finish with grated Mexican blend cheese. Wrap the tortilla and place seam side down in square dish, do the same with other 3. Pour Frontera Green Enchilada Sauce by Rick Bayless on top, then cover in cheese. Bake for 15-20 minutes at 400. Voila!!!!!!
