#15 Easy Enchiladas

So easy so good!

Cook some chicken in lime infused olive oil. When it’s starting to get brown, throw in some lime juice. Meanwhile, take four tortillas (corn or flour) and microwave for 30 sec to get them soft. Scoop some black beans onto each tortilla, then the chicken, and finish with grated Mexican blend cheese. Wrap the tortilla and place seam side down in square dish, do the same with other 3. Pour Frontera Green Enchilada Sauce by Rick Bayless on top, then cover in cheese. Bake for 15-20 minutes at 400. Voila!!!!!!

Update

Peas, tomatoes, and peppers have all started to come in. Watermelon is starting to get a touch out of hand, potato plants are mid-thigh on me, and strawberries are starting to turn red. I have a cayenne pepper plant that already has 10 peppers on it!

Unfortunately the spinach and lettuce are starting to bolt, which means I need to harvest them soon before they get bitter. Also, I think a rabbit ate my beets. But otherwise, things are going splendidly!

#14 Egg Breakfast Souffle Cups

3 eggs
2 egg whites
1/4 of a red bell pepper, de-seeded and finely diced
1/2 of a zucchini, finely diced
salt & pepper
low fat colby jack cheese, grated
1/3 package of bacon, finely diced
2 slices of wheat bread.

Preheat oven to 400 degrees. Spray a small frying pan with Pam, and saute the bell pepper and zucchini for a couple minutes. Meanwhile, fry the bacon. In a bowl, whisk all ingredients together. Spray a 6 cup muffin pan with Pam, and place circles of bread that are the same size as the muffin cups in the bottom of the cups and press them in. Pour mixture on top of the bread in the muffin pan. Place in oven, bake for 20 minutes, or until a knife comes out clean.

Review – OMG this was sooo good! And it was a Weight Watchers recipe too! If you want to cut down on prep time in the morning, do what I did: saute the vegetables and whisk all ingredients together the night before. Then in the am you only have to do the bacon and the baking! Please try this recipe you will not be disappointed :-)

#12 & #13 Indian Tandoori Chicken & Indian Saag served with Basmati Rice

Indian Tandoori Chicken

2 lbs chicken, cut into pieces
1 t salt
1 lemon, juiced
1 1/4 cups plain yogurt
1/2 onion, finely chopped
1 clove garlic, minced
1 t freshly grated ginger root
2 t garam masala
1 t cayenne pepper
1 t yellow food coloringf
1 t red food coloring
2 t finely chopped cilantro

1) Remove skin from chicken pieces, and cut slits into them lengthwise. Place in a shallow dish. Sprinkle both sides of chicken with salt and lemon juice. Set aside 20 minutes.
2) In a medium bowl, combine yogurt, onion, garlic, ginger, garam masala, and cayenne pepper. Mix until smooth. Stir in food coloring. Spread yogurt mixture over chicken, cover, and refrigerate 6-24 hours (the longer the better).
3) Grill on medium high heat, garnish with cilantro.

Indian Saag

1/2 cup butter
2 t cumin seed
1 green chile pepper, seeded and diced
2 cloves garlic, chopped
2 T ground turmeric
1 lb chopped fresh mustard greens
1 lb chopped fresh spinach
1 t ground cumin
1 t ground coriander
1 t salt

1) In a large skillet, melt butter and cook and stir cumin seed, chile pepper, garlic, and turmeric until fragrant, about 2 minutes.
2) Stir in chopped mustard greens and spinach a little at a time, adding tougher parts first. Continue to add greens, cook and stir until all greens are added and all are thoroughly wilted. Stir in cumin, coriander, and salt. Cover; reduce heat and simmer until greens are tender, about 10 minutes, adding water as needed to keep the greens moist.

Review:

I really didn’t care for this meal on the whole. I think the combination was a good concept, but I don’t think it tasted all the great. The chicken was hot pink thanks to the food coloring, and although the taste was fine, it wasn’t the most visually appealing. The saag was too bitter, so I guess I found out I don’t care for mustard greens. At least it was a good thing to try and test my skills.

I had a garage sale and made $200. Guess where it’s going…? All $200 down on the Chase card, bringing it to about $500. Now under $9K in debt!

I made pan crusted tilapia and dill mashed potatoes and asparagus and it turned out great!

Tilapia
1/4 cup cherry tomatoes quartered
2 tbsp lemon juice
2 tbsp capers, drained
1 clove garlic, minced
1/2 tsp dried basil
4 6 oz peices of tilapia
salt & pepper
flour
cajun spice
cooking spray
1 tbsp olive oil
2 tbsp butter
2 tbsp parsley

Combine first 5 ingredients, set aside. Sprinkle filets with salt & pepper. Dredge fillets in flour and cajun spice. Coat both sides of fillets with cooking spray.

Heat oil in large nonstick skillet over medium-high heat. Add fillets, cook 3 minutes. Reduce heat to medium; turn fillets, and cook 3 minutes or until fish flakes easily when tested with a fork. Remove from pan.

Add tomato mixture to pan, cook 30 seconds. Add butter, and pour over fillets, and sprinkle with parsley.

I hate fish and I loved this! And I served it to my husband and dad, and they liked it too! Also, it is low in fat and calories as it is a weight watchers recipe. What’s not to love!?

Ow :-/

So I went C25k training again with the group. My legs were killing me :-( One of the problems is that they skipped a week to get prepped for the race on Father’s Day. It was too much for me. I had mentally prepared myself to be ready to run 90 sec, then walk for 2 min. But when we finished warm up, we ran for 3 minutes, then walked, then ran again. I know 3 minutes is nothing for people who run, but for me it’s alot. (I’d like to point out my starting point…the couch!!) One of the instructors gave me some stretching ideas which I definitely plan to implement this week.

Everything is in!!

All but 1 cantaloupe. What’s in it you ask? A long list!!

On the far left side: 2 Roma tomatoes, 1 beefsteak tomato, 1 hybrid salsa tomato, 3 cherry tomatoes, 1 grape tomato, 4 red bell peppers, 4 white potatoes, 8 yellow potatoes, 2 sweet potatoes.

In the 2 pots: 1 cabbage, 1 rosemary, 4 dill, 1 basil.

In the center: 5 lima beans, 13 green beans, 3 snow peas, 3 sugar snap peas, 3 shell peas, 2 cucumbers, 4 Romaine lettuce, 4 red Romaine lettuce, 4 buttercrunch lettuce, 1 Brussels sprouts, 4 celery, 2 cauliflower, 2 cabbage, 2 broccoli.

In the near right: 1 cantaloupe, 1 watermelon, 4 beets, 2 chili peppers, 9 garlic, 16 yellow onions, 16 white onions, 18 carrots, 2 strawberries, 1 oregano, 1 parsley.

WHEW!!!!!!!

The whole system is based on Square Foot Gardening, a book by Mel Bartholemew. My husband built the boxes, trellises, fences, and grids. The soil is so-called “Mel’s Mix”, 1/3 vermiculite, 1/3 peat moss, 1/3 blended compost. My husband and I mixed all of these on a tarp and filled all 3 boxes; about 24 cubic feet.

This system allows more plants in less space and better organization. Everything is in 4×4 raised boxes and there are 16 sqaures each. Vegetables are planted based on how much space they will take up. For example, Broccoli will take up one whole square, potatoes 4 to a square, garlic 9 to a square, and onions 16 to a square.

Just $1.07 above 9K owed

It was only on April 18 that I had written about being just under 10K. I put the usual $237.40 on the Ford, $60 on the DFCU Loan, admittedly I had spent some on the Visa, so even though I paid $50 it was like only paying $10, and another $115 on the Chase card which brings that card down to $700.

Whoop whoop! My friends don’t understand how good paying off debt feels. They don’t know how hard it is to say no when they all go out to eat and drink and have fun.

But soon I will be out of debt. And soon they will have nothing but bloated stomachs to show for it, and soon I will have a bloated wallet.
