I thought it was going to be hard to find a job that I could fit into my 20-credit/quarter schedule, but I found a custodial aide job that pays almost 9/hour 15 hours a week and is from 5-8am, so it won’t interfere with anything else I need to do. With that in addition to my 3 week transportation assistant job, I should be totally set for the rest of the year, with an income I can save from in order to finally pay back my parents!

Well, the night wasn’t a complete disaster, but it wasn’t a complete success either. Basically, I was way too ambitious. I started off with a Blueberry Cobbler, which I made completely solo, and which turned out to be amazingly delicious! Next came the actual dinner, for which I was underprepared and by which I was overwhelmed. In the end, I had to have my friend make the Squash, while I made the chicken. They both turned out great, but I finished the chicken a good 15-20 minutes before she finished, and I forgot to add the tarragon until we were halfway through eating it… but I survived, learned a good deal, and I’m ready to try it again and keep a little bit calmer the next time.
I’ve planned my first big elaborate meal for this evening. I did my grocery shopping this morning, and after I run my errands this afternoon, the rest of the day will be devoted to cooking! First is the fruit cobbler I’m baking for desert (fruit as yet undecided). When that’s done, it’s time to make dinner. On the menu this evening is Pan-seared Chicken Breast with Vermouth and Tarragon Sauce, with Sauteed Summer Squash on the side. I’m feeling optimistic: I’m not expecting a complete disaster.
