How I did it: I waited patiently for the right guy to come along. And out of the blue.....there he was.....waiting and looking for me too.We rushed nothing and took our time getting to know eachother. We let things happen naturally and slowly everything fell into place. Read how I did it…

chicken empanadas

Decided to give this recipe a go when i had a pound of ground chicken in the fridge that i didn’t want to go bad. Turned out pretty good….i used empanada discs that i found in the freezer section at the store and i totally forgot to put in the jalopeno! WTH. Oh well, next time i’ll do it by the recipe, using shredded chicken & the jalopeno. Still turned out pretty yummie though. :)

Found a recipe the other day in my handwriting…don’t remember where I got it….just that i copied it from somewhere a few years ago….so i decided to give it a try last night.
