I made dinner last night! A very easy dinner, but dinner nonetheless. Here are a few tasty recipes:
Roasted Pear Salad
- Obtain three pears. Half and core the pears, then rub them down with olive oil. Place them on an over sheet and season with salt and pepper.
- On a separate oven sheet, spread out a layer of the pecans in syrup, the kind they sell with ice cream toppings. Mix in a few regular pecans too, unless you really want a sugar rush.
- Place both oven sheets in the oven at 350 degrees for 20 minutes. Halfway through, flip the pears and stir the pecans.
- Dice the pears into bite sized pieces.
- Toss the pears, the pecans, gorgonzola cheese and leafy greens into one tasty salad!
Mozzarella Chicken
- Grease a pan, then bake as many chicken breasts as you want at 350 degrees for 15 minutes.
- Take out the pan and spread pesto on top of the chicken. Top it off with mozzarella cheese.
- Return the pan to the oven for 2-3 min. (Until the cheese melts)
- Take ‘em out and eat ‘em!
These were both a big hit with the boyfriend, too—I’m calling this one a success. :)
